  • One large banana
  • Two beaten medium eggs
  • Baking powder, a pinch
  • Vanilla extract, a drop
  • One tsp oil
  • 25g roughly chopped pecans
  • 125 raspberries

Porridge with blueberries

Porridge oats are high in fibre and perfect with blueberries and Greek yoghurt, you could even buy frozen blueberries for ease and cost. This is a super healthy breakfast that will keep you full through the morning and can be ready in just ten minutes. Cook the porridge oats, top with yoghurt and blueberries.

Ingredients

  • 6 tbsp of porridge oats
  • 175g of frozen blueberries
  • 100ml of Greek yoghurt
  • 1tsp of honey

Overnight oats

Are you often feeling too rushed to eat breakfast in the morning? Then maybe overnight oats are the one for you! Overnight oats are ready to eat first thing in the morning for a midweek grab and go breakfast. These creamy overnight oats are full of healthy nutrients and can be adapted to meet your tastes. Simply, soak fruit and oats in a jar overnight, then wake up in the morning to soft oats which you can take with you on your commute or eat as an express breakfast. As well as the below ingredients you could also try with; seeds, nuts, pear, tropical fruit, dried fruit or grated pear. The perfect nutritious breakfast. 

Ingredients

  • Ground cinnamon ¼ tsp
  • Porridge oats 50g
  • Natural yoghurt 2 tbsp
  • Mixed berries 50g
  • Honey, a drizzle
  • Nut butter, ½ tbsp

These breakfast burritos are a nutritious wholemeal wrap full of breakfast ingredients, perfect to eat on the go. This recipe includes eggs rich in protein and avocado which has essential fats. Cook and prepare the ingredients and layer it all on a warm tortilla wrap, fold and enjoy.

  • 1 egg
  • 50g kale
  • 7 halved cherry tomatoes
  • Chipotle paste 1 tsp
  • Rapeseed oil 1 tsp
  • ½ small sliced avocado
  • 1 wholemeal warmed tortilla wrap

Avocado and poached egg on toast

This is a very simple and healthy breakfast with filling ingredients, which will give you energy and will keep you full until lunch. Tasty avocado can be used as an alternative to butter and is paired well with runny poached eggs on toast. 

Ingredients

  • 2 halved tomatoes
  • Rapeseed oil ½ tsp
  • 2 eggs
  • 1 ripe avocado, small
  • Rocket, 2 handfuls
  • 2 slices if seeded wholemeal bread or white sourdough
  • Black pepper
